Energy-boosting – Homemade Beans on Toast Recipe

Ingredients

  • 3 shallots, thinly sliced
  • 1 garlic clove, crushed
  • olive oil, for frying
  • 200g tomato passata
  • 2tbsp cider vinegar
  • 1tbsp golden syrup or dark muscovado sugar
  • 200g cooked cannellini beans
  • sea salt and freshly ground black pepper

Method

Put the shallots and garlic in a casserole dish over a medium heat and sweat in a drop of olive oil for 2-3 minutes.

Stir in the tomato passata, vinegar and syrup (or sugar), season with salt and pepper, and leave to simmer for 5 minutes.

Stir the cannellini beans into the tomato mixture, cover and leave to cook for 70-80 minutes, stirring occasionally. Serve on hot buttered toast.
