Raw Foods – Indian Salad Recipe

Serves

4

Ingredients

  • 3 carrots, grated
  • White cabbage, sliced
  • Red cabbage, sliced
  • 4 sticks celery, sliced
  • ½ leek, diced
  • 3 red peppers, sliced (optional)
  • Any other vegetable available

Dressing

  • 100g cashews, soaked for 8 hours
  • 100ml cold pressed olive oil
  • 150ml filtered water
  • 2dsp lemon juice
  • 2dsp coconut oil
  • 5dsp curry powder
  • 1tsp turmeric
  • ½tsp cumin
  • 1tsp Himalayan salt, or to taste

Method

Prepare the vegetables and set aside.

To make the dressing, place all the ingredients in a blender and blend. Pour over vegetables and mix well.
