Free-From Recipes - Chocolate Energy Bars Recipe

  • 400g pitted fresh dates
  • 60ml melted coconut oil
  • 2tsp vanilla extract
  • 40g unsweetened cocoa powder
  • 125g ground almonds
  • A pinch of fine sea salt
  • 1 heaped tbsp golden flaxseeds
  • 40g pistachios, roughly chopped
  • 40g walnuts, roughly chopped
  • 50g dried blueberries
  • 50g sunflower seeds
  • 2tbsp desiccated coconut


1. Blitz the dates in a blender to a paste. Add the coconut oil, vanilla and cocoa powder, and blitz again until smooth. Tip into a bowl, add the almonds, then bring the ingredients together with a wooden spoon or clean hands.

2. Gradually work in all the remaining ingredients except the coconut until evenly dispersed.

3. Line a 20cm square brownie tin or container with foil and tip in the mixture. Press in firmly with the back of a spoon, sprinkle with coconut and lightly press in.

4. Chill for 2 hours, or until set, then cut into squares. Store in an airtight container in the fridge.
