Super Bowl Salad Recipe

Ingredients

  • 3tbsp olive oil
  • 1tsp lemon juice
  • 1tsp honey
  • ½ garlic clove, finely chopped
  • Sea salt flakes
  • Freshly ground black pepper
  • 100g kale leaves, finely sliced
  • 70g cabbage, shredded
  • 1 medium carrot, grated
  • 1 avocado, stoned, peeled and sliced
  • 3tbsp sunflower seeds
  • 80g blueberries
  • 2 tbsp goji berries or aronia berries, or a mixture

Method

1. Whisk together the oil, lemon juice, honey, garlic and salt and pepper. Set aside.

2. Place the remaining ingredients in a salad bowl. Toss with the dressing and serve immediately.
