Healthy Honey Fruit Tart Recipe

Ingredients
For the crust:
- 15 Medjool dates, soaked in warm water for 10 minutes
- 200g cashew nuts
For the filling:
- 250g Greek yoghurt
- 2 tbsp honey
- Assorted fresh fruit, sliced
- Toppings of your choice, e.g.coconut flakes, toasted flaked almonds, grated dark chocolate, pomegranate seeds, edible flowers
Method
Line a 23cm tart tin with parchment paper.
Drain the dates and put them and the cashews in a food processor. Pulse until a thick dough is formed. Press evenly into the prepared tin and set aside.
In a small bowl, combine the honey and Greek yoghurt and mix well. Spread the yoghurt mixture evenly over the crust and decorate with fresh fruit and the toppings of your choice. Slice and serve.
