Chia Overnight Mousse Recipe

Ingredients

  • 100g ripe bananas, peeled and mashed
  • 470ml coconut drinking milk
  • 1tbsp almond butter
  • 1tsp vanilla extract
  • ½ tsp ground cinnamon
  • 150g chia seeds

Method

1. Blend the banana, coconut milk, almond butter, vanilla and cinnamon in a high speed blender for 5 seconds. Transfer to two glass jars and stir in the chia seeds, dividing the seeds evenly between the two jars. Seal the jars, put in the fridge and leave overnight. By morning the pudding will be set as the chia seeds will have soaked up the milk and become jelly like.

2. Enjoy with seasonal fruit and or berries, toasted coconut flakes, ground flaxseeds and a drizzle of honey.
