Coconut, Orange and Cardamom Pancakes Recipe

Ingredients

For the bottom layer:

  • 2 large eggs
  • juice of 1 orange
  • 200g coconut milk, from can
  • 250g soya yoghurt
  • 120ml soya milk
  • zest of ½ orange
  • 40g coconut flour
  • 150g brown rice flour
  • 1 lightly rounded teaspoon baking powder
  • ½ tsp fine sea salt
  • ½ tsp bread soda
  • ¼ - ¼ tsp cardamom
  • ¼ tsp cinnamon
  • 5g xylitol (1tsp)
  • coconut oil to cook

Method

1. Sieve all dry ingredients together in a bowl.

2. Whisk wet ingredients together, including orange zest, and add to flour mixture. Mix to a smooth, thick, creamy batter.

3. Heat pan, add a little coconut oil, then add mixture onto pan one spoon at a time. Allow bubbles to appear before turning over. Cook for one more minute, then serve with your favourite topping.
