Super Foods – Asian-spiced Kale Chips/Crisps Recipe

Ingredients
- 200g raw curly kale
- Olive oil, for drizzling
- 1 clove garlic, finely chopped
- 1 small red chilli, finely chopped
- 1tsp runny honey
- 2tsp soy sauce
- 1tbsp natural crunchy peanut butter
- ¼tsp Chinese five spice powder
- Sea salt
Method
Preheat the oven to 180°C gas mark 4. Remove the kale stalks and put the leaves in a bowl. Drizzle over a little olive oil and season with salt. Massage so that the leaves soften and wilt.
Mix the rest of the ingredients with 2tsp water to make a rich sauce. Coat the kale leaves with the sauce.
Place on a baking tray and bake for 15-20 minutes, until crispy and crunchy.
Remove and let cool, then store in an airtight container.
