Matcha Chia Protein Squares Recipe
Makes
16
Ingredients
- 3tbsp chia seeds
- 60ml coconut milk (or other plant-based milk of your choice)
- 135g oat flour (or just grind some rolled oats in a food processor)
- 3tbsp matcha powder, plus extra for dusting
- 1tsp sea salt
- 120g almond butter
- 4tbsp honey
- 1tsp vanilla extract
- 20 x 20-cm (8 x 8-inch) baking tin
Method
1. Soak the chia seeds in the coconut (or other plant-based) milk for 10 minutes. Meanwhile, line the baking tin with parchment paper.
2. In a large bowl, combine the oat flour, matcha and sea salt. Once mixed, add the almond butter, chia seed mixture, honey and vanilla. Stir well to combine (definitely use your hands!).
3. Evenly press the mixture into the prepared tin and place in the freezer for 10 minutes to harden. Remove from the freezer and cut into 16 squares.
4. Eat straight away, dusted with a little matcha powder, or store in an airtight container in the fridge for up to a week.
