Super Bowl Salad Recipe

Ingredients
- 3tbsp olive oil
- 1tsp lemon juice
- 1tsp honey
- ½ garlic clove, finely chopped
- Sea salt flakes
- Freshly ground black pepper
- 100g kale leaves, finely sliced
- 70g cabbage, shredded
- 1 medium carrot, grated
- 1 avocado, stoned, peeled and sliced
- 3tbsp sunflower seeds
- 80g blueberries
- 2 tbsp goji berries or aronia berries, or a mixture
Method
1. Whisk together the oil, lemon juice, honey, garlic and salt and pepper. Set aside.
2. Place the remaining ingredients in a salad bowl. Toss with the dressing and serve immediately.
