Chia-Up Pots Recipe
Makes
4 pots
Ingredients
2 small ripe bananas
300ml shop-bought or homemade unsweetened almond milk or coconut milk
50g chia seeds
1tsp vanilla extract
Method
1. Place the bananas in a bowl and mash with a fork. Stir in the milk, then add the chia seeds and vanilla, combining well.
2. Divide the mixture between 4 small bowls, glasses or ramekins, filling to about halfway.
3. Chill in the fridge until completely cold, ideally overnight (they’ll be fine there for up to three days).
Add toppings such as:
- Chopped strawberries, passion fruit, kiwifruit and orange zest
- Chopped mango, strawberries, kiwifruit and mint leaves
- Apple sauce
- Fresh blueberries and granola
- Raspberries and mint leaves
- Sliced banana and chopped pecans
- Desiccated coconut, pineapple and chopped dates
