Date, Almond and Chia Balls Recipe

- 250g pitted dates
- 250g raw almonds
- 3 tsp chia seeds
- Desiccated coconut, to coat
Method
1. Place the dates, most of the processor and blitz on the highest setting until a stiff paste forms. Add the remaining almonds and blitz briefly, so there are some big chunks of nut in the paste.
2. Sprinkle the desiccated coconut on to a plate. Processing the ingredients at such high speed will have squeezed all of the oil from the almonds, so the paste will be very oily. Break off thumb-sized pieces of paste, roll into balls, then roll them in the coconut. Place the coated balls on a clean plate.
3. Once all of the paste has been rolled into balls, place in the fridge for several hours, which will make them firmer and give them a great chewy texture.
