Raw Foods – Indian Salad Recipe

Ingredients
- 3 carrots, grated
- White cabbage, sliced
- Red cabbage, sliced
- 4 sticks celery, sliced
- ½ leek, diced
- 3 red peppers, sliced (optional)
- Any other vegetable available
Dressing
- 100g cashews, soaked for 8 hours
- 100ml cold pressed olive oil
- 150ml filtered water
- 2dsp lemon juice
- 2dsp coconut oil
- 5dsp curry powder
- 1tsp turmeric
- ½tsp cumin
- 1tsp Himalayan salt, or to taste
Method
Prepare the vegetables and set aside.
To make the dressing, place all the ingredients in a blender and blend. Pour over vegetables and mix well.
